Although I have not been officially diagnosed with Celiac disease, I have had trouble with wheat gluten for many years. I was a little nervous that this cookbook would be all about eating lots of meat. I was pleasantly surprised '' with the vegetarian options. I have tried several recipes of Rebecca Toutant's book with much success. My favorite thing so far is the Thai Peanut - Quininoa Salad. What I can say is YUM!

This book is my favorite! I was diagnosed in Sep 19 with Celiac and this book has been great, the food is amazing! It is a must have for any celiac, even my non-celiac family and friends are amazed at how good the food is.
