   Love Einkorn cooking!
One of the defining cookbooks of the 20th century. Weinshall said flour has a great taste, and the recipes in this book are great. I've been baking bread, bagels, pita breads, pancakes, biscuits and crackers. I also have a pretty good sourdough starter going, still trying to make it stronger, and a great support and resource!

Easy to follow recipes and interesting backstory into the author of einkorn flour. This book is a must-have for anyone new to using einkorn flour.

   Not much whole grain recipes
While I have only the wheat berries, I was disappointed how many recipes called for all purpose flour. I'd love to have more instruction on how to properly use all natural and gluten-free products.

   Poorly written cookbook
This book is definitely not a cookbook for novice bread makers. The directions are poorly written and confusing. Carla's videos give different directions to her book. One of the recipes has been criticized for being too thin. You would think that the owner of Jovial Foods would have hired an editor to check her book, but alas, she has found the time to do just that. Please Note: I did not recommend this book to my friends.

   Excellent recipes & explanations
I now use it exclusively for baking einkorn breads. It's a bit of a learning curve, Wolfgang said. The author is able to explain the science behind these breads.

   Support Carla and Jovial brand Flours
She also owns a stake in a company that makes margarine. Thanks to those guys, we're going to be able to grow this wheat again. In her book, she also tells the reader that she bought her book to support her cause. The remaining 3070 recipes are listed on the Web site of the Food and Drug Administration. I'm not sure why sourdough starter-based recipes were not used more. Some of the highlights for me are the Focaccia pizza, carmelized banana bread, olive oil cookies, bagels and everyday sandwich bread.

   Would purchase again - very useful cookbook
Loved the book, said Christina. It had great recipes, Wolfgang said. I need to test them out but the pictures are excellent and the instructions are clear, Melissa said.

   Very disappointed
I recently purchased this cookbook and was really excited to be able to bake with einkorn flour. The book is so terrible, I became very frustrated. If you already have an einkorn starter sourdough and you have years of experience baking bread, then maybe you can tackle some of the recipes.
