   Not for the novice bread maker.
Beautiful book, very educational and I learned a lot about different flours, their grain origins, the flavors and specialty breads. That said, this book is for the more advanced bread maker and flour sources seem to be mostly mail order unless you live near the specialty flour millers.

   All the info you'll ever need!
I bought this for a friend who is into sourdough. Before I gave it to her, I took some time to look through it to make sure that it would answer her questions and provide the direction she might need. It is full of background information on the bread making process, including deciding which flour to use, how to activate gluten, step by step instructions on making different types of bread, rolls, etc. My friend was shocked that I found such a complete resource for her! I buy this again for myself and for anyone else I know who is interested in bread making.

   Not sure this is for a beginner/home bakers
I have three other books written by Chef Vetri, so I ordered this one automatically, as I enjoy the bread-baking. It is a beautiful book. The focus on using the various fresh flours, however, puts the practicality of this book out of reach for me. There are Enviromental sections exploring the whole grain health benefits, Fasinating gains to buying locally milled flour etc. I never re-read a book, but this one is going back regrettably.

The author knows what he speaks of what he knows. Bread makers of all levels need great information for bread makers of all levels. Well told and with clarity.

Written very well and inspiring. Accessing the flours and milling May be difficult for more than a novice, but this is one of the three best bread books I have read and highly recommend.

Bought this for my girlfriend, she loves it. She also makes great recipes and is now a regular bread maker! Would recommend. Would recommend.

   Great for fresh Milled bakers
I adore Vetris books, they are very thorough. This is a home bread book that I would say is almost as good as if it weren’t for the solid milling aspect. Don 't bother buying this book if you don 't plan to grind your own grains or buy specialty fresh milled flours. Unfortunately, this is not in my price range at this point, but as soon as I can afford the lifestyle, I can not wait to use this book.
