Book Overview

This indispensable cookbook, an instant classic when first published in 1989, is now back in print with a brand-new introduction from the most celebrated authority on Mexican cooking, Diana Kennedy. The culmination of more than fifty years of living, traveling, and cooking in Mexico, The Art of Mexican Cooking is the ultimate guide to creating authentic Mexican food in your own kitchen, with more than 200 beloved recipes as well as evocative illustrations.

The dishes included, favorites from all the regions of Mexico, range from sophisticated to pure and simple, but they all share an intrinsic depth of taste. Aficionados will go to great lengths to duplicate the authentic dishes (and Kennedy tells them exactly how), but here too is a wealth of less complicated recipes for the casual cook in search of the unmistakable flavors of a bold cuisine.

Kennedy shares the secrets of true Mexican flavor: balancing the piquant taste of chiles with a little salt and acid, for instance, or charring them to round out their flavor; broiling tomatoes to bring out their character, or adding cumin for a light accent. By using Kennedy's kitchen wisdom and advice, and carefully selecting produce that is now readily available in most American markets, cooks with an appetite for Mexican cuisine-and Kennedy devotees old and new-can at last serve and enjoy real Mexican food.

This is the ultimate in Mexican cooking from the world's leading authority.
--Paula Wolfert, author of The Cooking of South-West France

From a native Mexican that truly knows her Mexican food
I was privileged to have been raised by a family of extraordinary Mexican cooks who had a broad knowledge of the best regional foods of Mexico, Yucatan, Oaxaca, Michoacan and now live in the USA, I miss having access to such amazing food. Whenever I get the blues '' for great food, I always grab this Mexican book. For anyone from beginners to savvy connoisseurs of Mexican food, this book will provide an excellent reference for the most basic Mexican dishes. Julia Child is the Diana Kennedy of the Mexican food scene and has many books. When I think of giving someone a book of Mexican food or recommending one, I always recommend this particular one. Happy cooking! Happy cooking! ''

   Book is very eclectic.....
In that, if you are looking for a specific recipe by a name you know, good luck. Don 't get me wrong, there are a lot of recipes in this cookbook, just not easy to locate something specific, and there are some basic Mexican food items included in this book.

A way to make the food I love!
I live in a place where good Mexican food is available, but I can make about five dishes on my own. For me it was pure joy.

   The best, authentic Mexican cookbook
Great book, no real photography if that is important in a cookbook, but if you want to get the beautiful deal authentic stuff, this is where to go. Highly informative, delicious recipes, I am thoroughly elated with this book. Some ingredients may be a little difficult to source, but if you're looking for authenticity, stop here.

Serious Mexican cookbook with lots of details explaining culture and history.
Beautiful edition, great hardcover binding and quality paper for printing. Would make a great gift for someone interested in learning how to cook authentic Mexican cuisine. A lot of the dishes did not sound like what I would normally think of as Mexican cuisine.

   Not what I expected
Wanted to make a wonderful dinner for friends and went by the Mexican reviews. If I could have purchased the table of contents, I would not have seen it. Starting with the soups, there was not one that I would make for guests. This book was just not for me. It was more like a manuscript book. Immediately I returned it. I am disappointed, but now I know that I need to buy cookbooks in a bookstore so that I can see at least the table of contents.
