I made the Corn Tortas and the Carnitas. The Carnitas was not 100% genuine, but they explain all that and their reasons why. I love the explanations, step by step pictures as well as just a forward recipe. Almost every recipe I have made from America's Test Kitchen has been wonderful, with or without modifications. Very useful cookbook for the experienced and for the novice alike. Both the corn tortillas and the Carnitas were absolutely delicious.

Unless you already own a Mexican restaurant or are an expert in Mexican cooking, buy this book. This made me the king of all my friends. With the recipes in this book, you could easily open a Mexican restaurant. They are every single one of them incredibly amazing. i'm actually buying this book for the second time, because I have worn the first one so bad from using it, I need a new copy. When I tell you this book is an amazing book, believe me.

Like all America's test kitchen books, the recipes are very easy to follow, using products you can pick up for most of the time at your local grocery store. They also give you the science behind why it works, so that you can apply it to other cooking. I made the Ancho Orange pork burritos for a crowd and was a huge hit with everyone going back for seconds and a few for thirds!

In this book, there are no authentic recipes. It is for Americans who want a hint of Mexican flavor in their food, best Mexican hardly! As is typical for cooks, they explain why the recipe works, but some of their explanations don 't really explain much of anything.

I found this book at our local library, I was going to copy some recipes, but liked too many! A comprehensive variety of recipes and color photos of each also include photos of how to actually make things, good information on different chilies, tools, etc. The price is a bit high for an ebook, but it is the only book I will do for Mexican cooking, I would give it more stars if there were more... love this book.
