When I don't know what to cook, I use this book. It made me want to cook more. I can make a gourmet meal without going to the store.

This is a book that I really like. Whenever I find a new vegetable in my CSA basket or get tired of the same old food-flavor combo, I whip out this bad boy. It has opened my eyes to new flavours that I wouldn't have thought of myself, and it keeps me from wasting time on flavours that wouldn't work together. It's not for the absolute beginner, but for a cook who enjoys a little experimentation and expands their menu.

I think this book is useful for any self-taught chef. This is the only book that stays on the shelf. I use it a lot. I am going on my third year as head chef of a restaurant, and this book is helping me to reach great heights in my career. I have never spent more money.

Several of the cook books I have picked up are James beard winners. This one is pretentious for the sake of being pretentious. The chefs are coming off the pages with a sense of superiority. I only made it about a third of the way. I don't care how good the book is, it's weird to be talked down to when you're reading a good book The writing and presentation of the content on cooking shows is a disaster, I know most of the names that go by in the book, but the writing and presentation of the content is a disaster. The people who give this five stars want to be like the book.

There are no recipes in this book. A bunch of opinions leaves you with no idea how to make anything with great flavors. As a non professional cook, I find this book useless. It does not make sense to give all this advice and not share techniques for cooking for such flavors. Very sad.

There are no recipes in this book. Suggestions for what goes with what. Have you ever wondered what to do with a tired chicken? There are hundreds of suggestions in this book. You have to be willing to try new combinations. We both have learned a lot about flavors. My confidence in preparing meals for my family has grown over time. This would be one of the books if I could only keep 5. We have given this as a gift three times. It has always been well received.

If you're at the point in your cooking where you're ready to leave recipes behind and start making your own dishes, you should highly recommend. Whenever I see an ingredient on sale at the farmer's market, I use this. What flavors complement it? Start making your own dishes and ingredients. The example dishes from different restuarants and the interviews with chefs about why they prepare an ingredient in a certain way are great. It's nice to use as a reference.

I recommend this book to my patients, who can afford it. The ones who are trying to cook more at home. A lack of confidence with ingredients on-hand is one of the reasons why people don't cook. The book cures that. Want to eat more asparagus but don't like the taste? Join the rest of us. Match the asparagus flavors to what's in your pantry and fridge by flipping to the asparagus listing. There is a Vegetarian version of this book for people who want to eat more plant foods.
