   “Simple” indeed - to the point of disbelief it was published at all.
This is a late April fools joke? A joke is embarrassing. Shame on the person who agreed to publish this waste of paper. There is a recipe for baked sweet potato which is 2 pages long. It was a sad scam. Do yourself a favor and pass on purchasing this book, it will save you time and money when you send it back.

   A great cookbook you can use DAILY!
This book is perfect for what I was looking for. I was looking for a vegetable cook book that I could use a lot, but Eric Ripert was known for his intricate recipes. For a reason, it is called vegetable simple. I used to be stuck in a rut of making the same 3 vegetables over and over again, but now I am excited to be able to make a variety of vegetable sides every day. The ingredients aren't hard to find and the recipes are easy to follow. Some of the recipes in this book could be used for a dinner party too.

   Uninspired
Most of the recipes are uninspired and can be found in many mass- marketed cookbooks for beginners. A lack of enthusiasm.

Less interesting than expected. The recipes are very easy to cook. We assume the book will have tips and recipes. It is unfortunate for the price.

   Pretty book but not for a seasoned cook
If you are going to give this book as a gift for a young person who is learning to cook, then you should buy it. Stay away from it if you have to. The pictures are striking. I will give the recipes to a teenager or a person who has never set foot in a kitchen before. I don't need a recipe to cook green beans with butter and salt. I didn't like the book.
